Choosing an Iranian pistachio variety should begin with the market, not only with the product name. Visual presentation, ounce size, processing format, target price and intended application all influence the right selection.
Start with the commercial role
Akbari is often considered for premium presentation because of its super-long form. Kalleh Ghouchi offers a jumbo, plump appearance, while Ahmad Aghaei combines a long shape with a light shell. Fandoghi is compact, versatile and widely used for bulk programs and processing. Green Peeled Pistachio Kernel is a different category, selected mainly for green intensity and ingredient performance.
Compare the specification, not only the variety
- Ounce count and visible size
- Natural-open and closed-shell ratios
- Moisture and aflatoxin requirements
- Raw, roasted, salted or flavored processing
- Bulk, retail or private-label packaging
Two shipments of the same variety can perform differently when their grade and processing specifications are different. A useful quotation therefore needs the preferred size, quantity, destination and packaging format.
Match the product to the channel
Premium gift and retail programs usually give more weight to appearance and uniformity. Food manufacturers may prioritize kernel yield, flavor, consistency and processing performance. Wholesale programs often balance availability, grade and cost.
The most effective first step is to describe the intended market and ask for a specification built around it.
